NOTE: To make a simple smoked duck stock, simmer 2 smoked duck carcasses, in water to cover, in a large covered stockpot for 3 hours. Strain the stock, chill it, and skim any fat from the surface. Simmer the stock again until it is reduced by one third, and strain it through a fine sieve.
